Do HDMI switches keep the signal properly or is there any breakdown which might affect picture quality or the high def copy protection thing? I'm running a PS3 and a Samsung upscaling DVD player into a single HDMI port.

you should be ok - it's digital, so it has to get through properly or you get no picture. Remember that if you buy online you have 14 days or so to return it if it doesn't work...
